This weekend I made my very first incredibly flat<\/em><\/a> cheesecake from this turtle cheesecake recipe<\/a>.\u00a0 I had never made a cheesecake but it was my best friend\u2019s birthday and she was having a dessert party, so I thought I should try.<\/p>\n

It came out amazing!!\u00a0 I was so chuffed with myself as people ate it and complimented on how good it was.\u00a0 I can make cheesecake.\u00a0 Not just the whip up and put in the fridge kind but the baked kind.\u00a0 The HARD KIND!!\u00a0 I\u2019m not a total kitchen failure afterall!<\/p>\n

There were a few things I had trouble with as some of the things it called for weren\u2019t available here in the Netherlands.\u00a0 It called for crushed vanilla wafers, but I found a mix for \u2018kruimelbodem\u2019 that I used in place of it that seemed to work ok.\u00a0 I had no idea what evaporated milk was, so after a mild panic I found out that what we call koffiemelk here is the closest thing.\u00a0 The caramels were hard to find and expensive, so\u00a0 I had to use Werther\u2019s soft toffees as we don\u2019t have the usual wrapped caramels like you see everywhere back home.\u00a0 Also, we can\u2019t get the harder cream cheese here, just the soft spreadable stuff from the tubs.\u00a0 So the cheesecake is slightly softer than the texture that I think it\u2019s supposed to have.<\/p>\n

The deliciously gooey caramel layer. Was so tempted to just eat it with a spoon…<\/p>\n

Chopped pecan nuts, seemed like a lot but not when you eat it you hardly notice them.<\/p>\n

Chocolate cream cheese filling, I had that spoon out again but I resisted!<\/p>\n

Cooked on the edges, darker and still a little wobbly in the center. \u00a0It’s done!<\/p>\n

A little more chocolate won’t hurt anyone, right?<\/p>\n

All in all it worked out great though.\u00a0 Even I was impressed with it when I tried it and I\u2019m usually a lot harder on myself than that.\u00a0 I tend to find something wrong with everything I make, but this was just downright delicious.\u00a0 My husband even had a leftover piece for breakfast and I don\u2019t remember him ever doing the sweets for breakfast thing.<\/p>\n

I\u2019ll definitely be making this again, perhaps when I am in Canada in October to see how differently it comes out when made with proper North American products.\u00a0 Obviously, if I\u2019m trying to lose weight then making cheesecakes isn\u2019t going to be something I do often.<\/p>\n

So if you are out this reading this and have always wanted to attempt to make a cheesecake, just go for it!\u00a0 It wasn\u2019t nearly as difficult as I thought it would be and if I can do it ANYONE<\/em> can!<\/p>\n
