I\u2019ve made this once or twice over the years and he\u2019s really loved it, so I dug out the recipe and made it again.&#160; It\u2019s quite easy to make and is so tasty.&#160; It reminds me of Sunday dinners at my Nana\u2019s where she\u2019d always serve this with a big smile because she knew it was one of my favorites.&#160; It\u2019s just a plain white sort of dense cake with a delicious sauce.&#160; I\u2019ve always described it as a caramel sauce but perhaps it\u2019s more of a vanilla sauce.&#160; Regardless, I could eat it until it comes out my ears.<\/p>\n<p>So I\u2019m going to share it with you!<\/p>\n<blockquote>\n<p><strong><span style=\"text-decoration: underline\">Nana Muriel\u2019s Cottage Pudding<\/span><\/strong><\/p>\n<p>Cake:<\/p>\n<p>2 tbsp Butter     <br \/>3\/4 cup Sugar      <br \/>2 Eggs      <br \/>1 1\/2 cup Flour      <br \/>1 tsp Baking Powder      <br \/>1\/2 cup Milk      <br \/>Pinch of Salt      <br \/>Small amount of Vanilla<\/p>\n<p>Mix the butter and sugar together and then add the rest and mix together until smooth.&#160; Grease and flour cake pan (I use what I call the \u201csmall square one\u201d, I know, so technical.&#160; Just a small brownie sized square baking pan).&#160; Bake at 350 (or 175 C) for 30 minutes or until it begins to brown on top and you can poke it with a toothpick and it comes out clean.<\/p>\n<p>Sauce:<\/p>\n<p>2 tbsp Butter     <br \/>2 tbsp Flour      <br \/>1\/4 tsp Salt      <br \/>1\/2 cup Brown Sugar<\/p>\n<p>Combine the above ingredients over medium heat and stir until smooth (I melt butter, then add the flour and salt to it, mix them, and then add the brown sugar).&#160; Allow to cook until it bubbles and then remove from heat.&#160; Add 1 cup of boiling water, stir until smooth again and return to heat.&#160; Boil until thick and add a small amount of vanilla.<\/p>\n<p>When I make this I get 9 pieces of cake out of this recipe and we really like the sauce so one of those batches will yield (for us) 3 servings.<\/p>\n<\/blockquote>\n<p>If you follow Weight Watchers here in NL like me, using those portion sizes it comes to 4 points per piece of cake, and 6 points per portion of sauce.&#160; Not something to eat every day obviously, but worth it!&#160; They are also quite big portions so it could easily be cut down to a more WW friendly size if you wanted to have it more regularly.&#160;
